Easy Carrot Cupcakes

Spice cake and carrot cupcakes feature walnut pieces and cinnamon. Cupcakes topped with cream cheese frosting.
Ingredients -

1 package Spice Cake Mix
1-1/2 cups shredded Carrots
1/2 cup chopped Walnuts
1 teaspoon Ground Cinnamon
1 (16 ounces) can Cream Cheese Frosting

 
Preparation:

1. Preheat oven to 350 F.

2. Prepare spice cake mix according to package directions. Fold in shredded carrots, chopped walnuts, and ground cinnamon.

3. Line muffin tins with paper cupcake cups.

4. Fill cups half full.

5. Bake 18 to 23 minutes or until a toothpick inserted in center of cupcake comes out clean.

6. Remove from pans to wire racks

7. Cool completely before frosting with cream cheese frosting.

 



Cooking Tip
Shredded Carrots
For best cupcake baking results, shred the carrot and lay the entire mass on a paper towel to absorb some of the natural moisture.

Large-Sized Cupcakes
If you will be making large sizes cupcakes, be sure to lightly grease the top of the cupcake baking pan.
